Greek stuffed chicken with roasted veggies. Thinly sliced zucchini, tomato, red onion, and lemon. Made 5 slices in a chicken breast and brushed it with a mix of olive oil, fresh dill, and fresh parsley. Then stuffed each of the five slices with a piece of the aforementioned veggies / fruit. Topped with feta and shredded mozzarella. Roasted veggies consisted of seasoned potato, carrot, and onion chunks.
